Dear friends, here we are again on this sweet Sunday for a new recipe of salted muffins this time. Because yes, even if I have a passion (or addiction) to sweetness, why not, for once, vary the pleasures and propose a dish a little more spicy. And I have to say that it was a first successful attempt for these goat cheese muffins that I had the pleasure to prepare for New Year’s Eve. To make this recipe, you will need:
- 125g wheat flour
- 2 whole eggs
- 50g of grated emmental cheese
- 100g of milk
- 1/2 packet of baking powder
- fine salt and pepper
- chives
- 200 to 400g of goat cheese
Once you have incorporated your eggs, herbs, dry goods and milk into your dish, you can start mixing to get a doughy, somewhat lumpy mixture. Use two spoons to make it easier to mold and distribute the mixture evenly. Sprinkle with a small amount of grated cheese for a golden, crispy result.
As with any muffin recipe, remember to let them cool before unmolding. You can also serve them as an appetizer or side dish at parties, or devour them selfishly if you’re feeling peckish.
